A family operation whose real product was an operating system.
Chiang Mai, Thailand. Private family farm with HACCP operating manual, 50,000 square metres.
Situation Source record
Set up for a private family, whose operators were trained with a HACCP system and operating manual.
Challenge
Give a family operation a food safety system its own staff could run, and prove it to a buyer.
What JYCO examined
A family operation whose principal need was an operating system: a HACCP framework, a manual, and operators trained to run both. The variables were operations and labour, with crop and food safety standards flowing from them.
Issues identified
The operation lacked a system, not a crop. Without a HACCP framework, a manual and trained operators, the produce could not reach the buyers that paid for it. Variables in play: operations, labour, crop.
Approach
Build the operating system to outlive the installation: procedures, records and training that let an operator run the farm without the supplier.
